Well, both situations are possible and each one could be correct. For example:

He watched television, drank beer, and ate potato chips.
Here we have a parallel structure triggered by "and" that links up three parallel verbs phrases. The meaning of the sentence could be interpreted to be a series of actions that he engaged in, perhaps even in the given order. All three activities are logically on par with each other in the sentence.

He watched television, drinking beer and eating potato chips.
We again have a parallel structure triggered by "and" but now there are two parallel participial phrases in the structure. The meaning of the sentence is different now. It's clear that while he watched television he engaged in two activities: drinking beer and eating potato chips.

In the example you posted, the parallel structures (or lack thereof!) can be seen clearly if you strip away the extras and get each option down to its core:

A. Teams can protect data while assessing, helping, and supporting.
B. Teams can protect data while also assessing, as well as helping, and to support.
C. Teams can protect data and assess, help, and supporting.
D. Teams can protect data while facilitating, help, and supporting.
E. Teams can protect data and assist, helping, and support.

A is the only option that maintains the parallel structure of the participial phrases that follow the main verb "can protect."
