How do you write notes ?

This is kinda dumb but how to you write notes I see girls with their iPads have all these fancy programs and fonts but like note book ones too with pretty handwriting and titles and boxes and subheadings. Like how do u do these while the teachers talks I can't write fast and I can't write pretty. Is there anyway to fix that ?
